Coconut Pie

Thanks to school being out and Bountiful Baskets I got to make a pie this week.


Coconut pie with Mango White Chocolate Topping
Crust:

  • 1 stick of cold butter, cubed
  • 1 1/2 cup rice flour
  • a little cold water
Filling:
  • Coconut pudding (I wanted to make pudding from scratch but couldn't find the ingredients. I will def be doing it later though)
  • 1 mango, peeled and cubed
  • 6 white chocolate melties
  • a little sugar
  • a little butter
OK Start!
  1. Preheat oven to 400 degrees. Make the pie crust and place it in a greased pie pan for about 12 minutes.
  2. Mix the pudding to the "pie filling" directions and stir. Set aside until the pie crust is ready.
  3. In a small pan, on medium/low heat, melt the butter, sugar, and mango together. Once it is somewhat syrupy stir in a few white chocolate melties.
  4. Pour the coconut filling into the pie crust, then gently top with the mango mixture. 
  5. Bake on middle rack about 20 minutes then let it cool over night.
Bad picture, but it was delicious!
