Greek Get Well Slow Cooker Chicken

I found this on www.allrecipes.com and modified it slightly (basically added stuff I had on hand and omitted stuff I didn't. Who wants to run to the grocery store all the time?). I love these kinds of recipes because you can use up stuff in your fridge and make it a little different each time. It's a new spin on chicken soup, and really easy to make. 

You need:
  • chicken drummies
  • 2+ carrots
  • about 1/4 of a cabbage
  • garlic to taste (optional you can add onions. I was going to but forgot)
  • parsley, ground rosemary, salt, pepper (I used rosemary salt)
  • chicken broth and water (if you run out of chicken broth as I did)
  • any other veggie you want, I used a small zucchini
  • optional corn starch (or tapioca starch for those with a corn allergy. Dad)
  • White rice for serving
Get your slow cooker out from the bottom of your cupboard. This will require moving like 8 pans and you might hit your head. Once you have slow cooker removal success, pour the raw chicken drummies on the bottom (I had about 8).  Pour over about 2 cups of chicken broth, or like me about 1 cup of broth and 1 cup of water. Basically you just want the chicken submerged.Sprinkle on your seasonings.

Chop the cabbage  in about 1 inch pieces and pour that on top of the chicken. Chop the garlic (course) and layer that on top of the cabbage. Next chop your carrots and add those, then the zucchini. Pour a little bit of water over that layer and add more seasonings. 

I cooked on high for 6 hours, came out great. I scooped out the food and then poured the liquid in a pot and added corn starch (add starch BEFORE you boil the liquid) then stirred it until it boiled. Makes a nice gravy. I served everything over Jasmine rice and it was pretty good!
