Jerad loves dill, so I wanted to surprise him with a dill inspired dinner after work (he worked 8-8). I found a lemon-dill roast recipe on www.allrecipes.com (what would I do without this web site??) and then cooked up a pork chop in chicken broth (stock I made from left over bones and chicken when I made the slow cooker chicken a few nights ago)
Lemon + Dill Roast Potatoes
- Preheat oven to 400
- Peel about 5 (or more) red potatoes and cubed
- About 1 tablespoon lemon juice
- Dill to taste (fresh or dry) I used a dry mix from the Boise Co-op
- sea or kosher salt, fresh ground pepper to taste
- about 1 tablespoon melted butter
- about 2 tablespoons canola oil, or more if you used more potatoes
Mix the lemon juice, dill, salt, pepper, butter, and oil in a large bowl. Toss in potatoes and cover evenly with mixture. Bake at 400 for 45 minutes. They are DELICIOUS! Buttery and flavorful with great texture throughout.
Simple Pork Chop
- In a sauce pan pour a small amount of canola oil and heat to medium
- Place in pork chops, salt and pepper the side facing the top
- Pour in about 1/2 chicken broth
- Cover and bring to boil about 3 minutes (longer for thicker chops)
- Turn pork chops and salt and pepper other side.
- Cover another 3 minutes
- You can flip one more time if they aren't done, flipping can actually trap moisture in the middle of the meat so it tastes better. Also, don't skewer the meat with a fork to flip, you will lose moisture
Creamy Dill Sauce
- About 1/2 tablespoon butter, melted in a pot on low/med
- About 1/4 cup COLD milk
- 1/4 tablespoon corn starch
- Dill, to taste (I used a lot. You should too)
- Salt, pepper to taste
- About 2 tablespoons cheddar, cubed or shredded
Pour the cold milk into the pan with the melted butter. Quickly add corn starch and wisk. Bring up the heat and watch the pot, milk burns quickly! When it is starting to boil add the cheese and season with salt, pepper, and dill. Wisk until thick. Remove from heat and cover. Pour over potatoes and pork chop.
